Saute or Grill Spam, pineapple,honey and Kam’s Chili Sauce. Wrap w nori and place in a steamed Bun! Great Hawaiian Tailgate!

 

Natto, Japanese ferment bean paste, will never cross my lips again. Spam Musubi, on the other hand, is something I love. I used to have a roommate of Vietnamese descent, and he would eat it all the time. It looked gross, but I finally had it – wrapped in seaweed and rice – it was terrific.

Island Crab Cakes with Tropical Salsa

Tropical Salsa

Get:

1 ½ C. Peaches

½ C. Pineapple

1 Fresh Jalapeno (diced)

1 Fresh Lime Juice

5 Tbsp. Purple Onion (chopped)

¼ C. Kam’s Kettle Cooked Chili Sauce

2 Tbsp. Fresh Cilantro (chopped)

 

Make it:

Chop and combine all ingredients.

Salt & Pepper to taste. Put mixture in the fridge for 1 hrs. to marinate. Great on grilled fish!

Tropical Salsa

I’ll eat anything. I love food in general. I love traditional Mexican, carne asada. Just meat, beans, rice, and some good salsa.

Get:

Chili Bacon Wrapped Shrimp

Chili Bacon Wrapped Shrimp

12 large raw shrimp (16/20’s or so) peeled and deveined

1 lemon, cut in wedges

6 oz. Kam’s Kettle Cooked Chili Sauce (Sweet or Hot)

12 slices thin cut bacon or prosciutto

toothpicks or skewers (soak in water 30 min.)

Pre-cook bacon on one side on baking sheet at 325 degree F. for 5 minutes then drain on paper towels (No need to pre-cook prosciutto). Wrap each shrimp with half slice of bacon or prosciutto by working from head to tail. Secure in place with picks or skewer. Generously coat each shrimp with chili sauce. Grill on high for 3 minutes per side until shrimp is pink and curled, and bacon is crisp. Re-Coat shrimp as desired and serve with lemon wedges.

Optional: Bake in advance! Preheat oven to 425 degrees F. Place shrimp on baking sheet. Bake 10 to 14 minutes, turning once. Wrap in foil to transport, don’t lose the juice, it’s the best part!

Fried Chicken Apple Pie Sammy

Fried Chicken w Glazed Apples and Cheddar Cheese w Kam’s Chili Sauce.

As American As Apple Pie!

 

Fried Chicken Apple Pie Sandwich

 

2 Brioche Bread Slices

2 Chicken Breasts (thinly sliced)

1 C. Buttermilk

1 C. of Flour (with a dash of cayenne)

4 strips of smoked bacon (thick cut)

2 thick cut slices of cheddar cheese

1 Apple

1 tbs Light Brown Sugar

1 dash of Cinnamon

1 tbs Sweet Cream Butter

Top it with Kam’s Chili Sauce!

 

Dredge chicken in flour then buttermilk and again in the flour. Heat in oil @400 degrees till golden brown.

Bake bacon strips in oven at 375 degrees for 10 minutes, sprinkle with sugar. Cook till bubbly.   Let cool.

Cook sugar, butter, cinnamon in pan till bubbly, add apple slices, cook for 2 min. on each side

 

Assembly: Butter one side of both Brioche slices in a skillet till toasted

Place a fried chicken breast on top of a slice

Top the fried chicken with a cheddar cheese slice. (Broil till melted)

Top with bacon, then caramelized apple slice and serve.
