My Home Canning Tradition Turned American Dream

After 40 years of putting up Chili Sauce in my home kitchen our 100 year family tradition has made its way onto grocer’s shelves across the nation. Since the late 60’s and every summer since, I have been canning jars of the Sweet & Spicy Chili Sauce condiment. Proving the best things in life can remain simple, I was able to produce this sauce in large batches while maintaining its integrity as a high quality artisan sauce. Made with 5 simple all natural ingredients, our tomato based condiments are a mere fraction of the sodium of most national brands, contain considerably less sugar and have no high fructose corn syrup, gmo’s or water. Literally at the heart of America’s “clean eating” trend, our new Facts Up Front label helps shoppers to compare nutritional values quickly.

Chili Sauce is a comfort food that brings me back to my childhood, harvest season, and the aroma of tomatoes and chili’s cooking in a stove-top kettle. Old fashioned, home-cooked foods tell a story about people and their families, and our products do just that. Kam’s “Authentic American” Chili Sauce started out in my grandparent’s kitchen in New York, and now, years later, my recipe is exactly the same with the taste of home-style goodness. I will never forget helping my parents craft the home-style chili sauce every summer. For me the coveted ritual of pureeing red hot chili’s through an old meat grinder, blanch-peeling huge baskets of juicy tomatoes, dicing sweet onions with eyes full of tears, and slow simmering in kettles late into the night till canning took place, never faded. 

Aside from our appeal as a healthy “kicked-up” ketchup alternative for hot dogs, burgers and morning eggs, our ready-made cooking sauce offers home-style cooks convenience when crafting many American Foodie Favorites such as Sloppy Joes, Pulled Pork Sandwiches, Meatloaf, Baked Beans, Cocktail Wieners and other Party Food Classics. Growing up we had a summer home on Hilton Head Island, SC and with chili sauce, Low Country Southern traditions were made easy, such as Shrimp and Grits, and Seafood Sauce for locally caught Shrimp, Oysters, Crab, and Clams.

Moving to Northern California in the mid-90’s, sourcing ingredients each summer to can chili sauce was easy with so many local growers in the region. Encouraged by my chili sauce loving friends, and working on the packaging and design with my sister Linda (who still handles all of our design, food preparations, styling and photography) I worked relentlessly to “put up” the sauce commercially and formally launched at the Fancy Food Show in San Francisco in January 2014.
